Winemaking: Grapes are picked in the early morning to retain freshness and aromatics before pressing directly. Spontaneous fermentation with indigenous yeasts begins slowly with the juice still at a cool 16 degrees. Fermentation in horizontal, re-purposed stainless steel milk vats, later racked into concrete for ageing. Bottled unfiltered in spring.
