Winemaking: From successive selections of grapes concentrated by noble rot with 20% overripe grapes to keep a touch of freshness. Pressed slowly, and fermented in oak barrels. Fermentation stops naturally with high sugars in the botrytised fruit. Aged for 18 months in barrel.
