Winemaking: Manual harvesting of 60 year old vines. Direct pressing, with a 24 hour slow decanting before fermentation to settle the wine. Ferment and aged in stainless steel for 12 months, before restarting fermentation lees from the cellar and from Agnes & Jack Carroget in Ancenis, moved to barrel for a further 12 months ageing. Bottled in 2020.
