Winemaking: Hand harvested, farmed to biodynamic principles. Fruit spends a day in the fridge to retain delicate aromatics. Pressed slowly over 6 hours and co-fermented in fibreglass, Lori tries to keep early fermentations cool with circulated water. Bottled in March 2020.
Soil: Limestone & sandy soils
Lori Haon started farming 15 hectares in Valliguières in the Gard in 2015. He is a young winemaker who trained in Burgundy, Alsace and Champagne. Lori is committed to a respectful approach to his terroirs, without the use of chemical and synthetic products or weedkiller. His wines are vinified without the use of sulfites.
