Winemaking: Manual harvesting of 40 year old vines. Direct pressing, with a 24 hour slow decanting before fermentation to settle the wine. Fermentation with indigenous yeasts. This parcel always ferments slowly, the 2020 was about 9 months. Small dose of sulphur added before malolactic fermentation. Bottled shortly after.
