Winemaking: As harvest progresses, a few cases from each vineyard are added to a large concrete tank. Often as whole bunches, sometimes pressed directly to top the tank up. The whole mêlée ferments slowly at about 12 degrees for 6 weeks before pressing back to tank for ageing. Bottled with no additions.

Soil: Sourced from all of Lori's vineyards, so we have deep silty clay, limestone, sandstone, gravelly calcareous clay and lauzes pebbles.
