Winemaking: Hand harvested, farmed to biodynamic principles. Fruit spends a day in the fridge to retain delicate aromatics. Pressed slowly over 6 hours and co-fermented in fibreglass, Lori tries to keep early fermentations cool with circulated water. Bottled in January 2021.

Lori Haon started farming 15 hectares in Valliguières in the Gard in 2015. He is a young winemaker who trained in Burgundy, Alsace and Champagne. Lori is committed to a respectful approach to his terroirs, without the use of chemical and synthetic products or weedkiller. His wines are vinified without the use of sulfites.
