A debut for both the fruit and for Oriane: the first crop off 5 year old Syrah vines yielded this lively, blushing-pink pet-nat. After a steep learning curve, the results are more than worthwhile. Strawberry laces and sherbert undercut with electric acidity.

Winemaking: Hand-harvested from five year old vines, their first proper crop. Pressed directly to stainless steel tank, temperature controlled with a drapeaux-froid for a long, slow fermentation until October 10th. Racked three times before bottling, disgorged March 7th, unfined, unfiltered, no added sulphur.
