Winemaking: Hand harvested. Tanks are half-filled with whole bunches, gently crushed to release their own juice, topped up with more direct-press juice. An infusion maceration for 15 days before a very soft pressing. Fermentation and ageing in concrete tank.

Soil: Deep red clay and loam
Yield: 45hl/ha
Lori Haon started farming 15 hectares in Valliguières in the Gard in 2015. He is a young winemaker who trained in Burgundy, Alsace and Champagne. Lori is committed to a respectful approach to his terroirs, without the use of chemical and synthetic products or weedkiller. His wines are vinified without the use of sulfites.
