Winemaking: Manual harvesting of 40 year old vines. Direct pressing, with a 24 hour slow decanting before fermentation to settle the wine. Fermentation with indigenous yeasts.
In 2023 fermentations in this this parcel were unusually fast, and had a big yield compared to recent losses in the prior couple of vintages. This had finished by September 12. Amphibolite soils here always yield something bright & easy-drinking. Small dose of sulphur added at bottling
