2021 - Pet Nat
A delicately pale zero-sulphur pet nat from the edge of the Romney Marsh, packed with little red berries and a long saline finish. The label is a chromotography soil sample from their vineyards, a theme that will likely continue for all Ham Street releases!

Vintage: 2021
Winemaking: A gentle foot stomp for the Pinot Noir, and an overnight maceration for the rest, all three varieties were pressed the next morning and began spontaneous fermentation in stainless steel. Aged for a few months in a combination of amphora and tank, the wine was bottled in spring with a little reserve-juice from the first press to help fermentation continue in bottle. Not disgorged, no added sulphur.
