Grapes/Blend: Bacchus (43%), Solaris (43%), Orion (7%), Madeleine Angevine (4%) and Phoenix (3%)

Vintage: NV (2020+2021)

Winemaking: All varieties from both 2020 and 2021 macerated on their skins for varying amounts of time before being pressed in a small basket press.

  • Bacchus was grown using a lutte raisonnée approach on clay over chalk in the Test Valley, Hampshire (2020). Bunches were hand destemmed, and berries partially crushed by foot. Left to soak on skins for 7 days before being pressed and transferred to a neutral Burgundy barrel. Aged in barrel for 18 months under a veil of flor without topping.

  • Solaris was grown using Organic principles on clay soils in Devon (2020). Whole bunches were foot trod and left to ferment for 5 days before being pressed and transferred to a neutral Burgundy barrel. Aged in barrel for 18 months under a veil of flor without topping.

  • Madeleine Angevine was grown Biodynamically on clay over limestone in Wiltshire (2021). Whole bunches were foot trod and left to soak for 2 days. Co-fermented with Orion and Phoenix.

  • Orion and Phoenix were grown Organically in Oxfordshire on soils consisting of lime-rich loam over limestone (2021). Bunches were hand destemmed, partially foot trod and left to soak for 4 days. Co-fermented with Madeleine Angevine. Aged on lees for 7 months.

Bottled via gravity without fining, filtration or additions and with respect to the lunar calendar.
