Winemaking: Manual harvest. 200 year old vines. Vineyard located just 800m from the river on sandy black volcanic soils. De-stemmed before spontaneous fermentation with native yeasts in concrete tank. Aged in concrete. Unfiltered. Small amount of sulphur added at bottling.

Soil: Alluvial stones over sandy black basalt.

Yield: 2.8 tons/ha
