Winemaking: Hand harvested 100 year old Carignan & 45 year old Mourvedre. Each as 20% whole bunch, 80% destemmed. Fermented separately for 3 weeks in 600l barrels, given lots of air with a borrowed air-hose (more gentle than pigeage), then aged outdoors in twin 2500l foudres. Bottled unfined and unfiltered and with no added sulphur.
