Winemaking: Braucol from 25 year old vines. Hand harvested, no added yeast or sulfites. Fermentation that ends in the bottle and traps the gas naturally created during fermentation. No filtration. The end result is a dry pet nat, slightly vegetal and very refreshing!

Vignereuse (Marine Leys)

Marine works with a mix of local varieties: Mauzac, Loin de l’Oeil, Braucol, Duras and then some Gamay, and Syrah (the most commercial of the varieties, and Gaillac used to sell a lot of bulk must and juice to other regions). She tends to 5 hectares and works organically.
