Winemaking: A 90/10 blend of Syrah & Clairette. In press for 4 hours, Pressed slowly 4-5 hours. Juice is left to settle, then into fresh tank to co-ferment. A quick 4-5 day fermentation with temperatures controlled by circulated water.
Soil: Sandy soils with a limestone bedrock
