15 year old vines. Partially de-stemmed and placed into 50hl cement tanks for 24 hours. Drawn off and pressed before being transferred to stainless steel for spontaneous fermentation with the skins added. Bottled in spring whilst residual sugar is at 13mg/l, 6 months in bottle. No filtration, no added sulphur.

Young vignerons from Nizza Monferrato have finally made their dream come true and created a place where they can grow their own grapes: in the heart of the UNESCO site of Piedmont region. They farm Barbera, Moscato, Cortese and Chardonnay following a rather holistic approach for a low impact on the eco-system.
