Made using purchased grapes from an old, organically-farmed Spätburgunder vineyard. The grapes were de-stemmed with 20% of the stems added back in the must. It was a cold autumn so it took about three weeks until sugar had been converted into alcohol. Gentle pressing, malolactic fermentation and aged on lees in old oak. Bottled unfiltered
