Hand-harvested on 7 October 2016 and bottled in May 2017. Twelve hours of maceration, which helps add body and brings the naturally high acidity down; the acid from the juice combines with a compound in the skin and drops out. Wild yeasts, fermented in 1,000-litre wooden barrels. Unfiltered. Aged 7 months in large old oak.
