Manual harvest, 10 September 2016. Ten hours overnight maceration. Wild yeasts, fermented in stainless steel and old barriques for 4-5 weeks, then bottled with 18g/l of residual sugar. Unfiltered. Bottled October 2016. 10% of the lees is left inside for as long as possible to help preserve the wine and prevent it from developing cider like flavours. The wine is disgorged to order. Aged 6 months in bottle

Soil: Loess; loam with a lot of shell limestone

Yield: 55hl/ha
