In 2014, Michael and Melanie took over a Müller-Thurgau-vineyard from a colleague; the vineyard has a hut in the middle of it which they and local conservationist, Christian Söder, thought looked like a perfect home for bats. Several bat-boxes were installed, the guano is sold as fertiliser, and a share of the revenue goes back to protection of bat habitats. The label shows the rare grey long-eared bat.

The grapes were harvested in September (Müller-Thurgau) and October (Silvaner) 2016, and bottled in February 2017.  The whole Müller-Thurgau clusters were pressed, the juice settled, racked and aged on the full lees - until one of the tanks became oily. The tank was re-filtered and revitalised with lees from a different Müller-Thurgau tank. The Silvaner batch is the pre-harvest from two skin-fermented batches. Those Silvaner vineyards had sunburn, so in a first round of picking grapes all the ones with sunburn were put in extra boxes, fermented with a short maceration time in the tank. Aged on lees in steel, fibreglass and old oak.
