Grapes are picked before they are fully ripe, with good acid levels. Direct pressing. Fermentation with native yeasts. No malolactic fermentation. Unfiltered. After a slight racking, the wine is left in steel tank for six months

Sulphur: 40mg/l total

Soil: Clay and limestone

Yield: 50hl/ha
