Winemaking: Hand harvested and hand selected grapes. Grolleau and Cab Franc are vinified separately. Both macerated as whole bunches with a little remontage to keep the bubblegum carbo aromatics to a minimum. Grolleau macerates for a week, Cab Franc for 10 days. Pressed to tank until bottling in February 2020.
