Winemaking: Grapes are hand harvested, de-stemmed, and fermented in fibreglass tanks. A 7-day maceration, with fermentation well under way by day 4.
Pressed and fermented in tank until 18g residual sugar remain. Bottled unfiltered to finish as a pet nat in the bottle. Lightly hand disgorged before bottling with no added sulphur.
