Vintage: 2021

Winemaking: Grapes are hand harvested, de-stemmed, and fermented in fibreglass tanks. A 7-day maceration, with fermentation well under way by day 4.
Free-run juice continues fermentation in tank until 18g residual sugar remain. Bottled unfiltered to finish as a pet nat in the bottle. Lightly hand disgorged before bottling with no added sulphur.

Vignereuse (Marine Leys)

Marine works with a mix of local varieties: Mauzac, Loin de l’Oeil, Braucol, Duras and then some Gamay, and Syrah (the most commercial of the varieties, and Gaillac used to sell a lot of bulk must and juice to other regions). She tends to 5 hectares and works organically.
