The vines were planted in 1990-1991, and farmed biodynamically since 1998. They harvest manually, with selection in the vineyard. Slow and gentle pressing. Indigenous yeasts. Fermentation commences in tank, with end of fermentation and aging in old barriques for 16 months.

Acid: 6 g/l

Sulphur: 30 mg/l total

Soil: The topsoil is clay and glauconite chalk, with many trace elements – particularly iron silicate. The subsoil is chalky tuffeau limestone

Yield: 20 hl/ha (the parcel suffered heavy frost
