Winemaking techniques: Harvested at maturity. The grapes are harvested by hand and sorted. De-stemmed and put in a tank without addition of yeasts. Maceration of 8 days with some pumping over. Small dose of sulfur added.

Ageing: Fibreglass

Sulfur additions: 20mg/l total added used in winemaking

Soil: Clay and limestone on the edge of the limestone plateau of Cordes. Shallow soil. South facing

Vignereuse (Marine Leys)

Marine works with a mix of local varieties: Mauzac, Loin de l’Oeil, Braucol, Duras and then some Gamay, and Syrah (the most commercial of the varieties, and Gaillac used to sell a lot of bulk must and juice to other regions). She tends to 5 hectares and works organically.
