The first white vintage from Rémi. A rich bruised-apple texture with hints of salt and mineral. Retains freshness with a pronounced acidity.
Grape Varieties: Melon B
Hand harvested, Cold maceration over night before pressing. Fermentation in fibreglass, tank kept in cold room at 15 deg C. Fermentation was long, 3gr of residual sugar left. Filtered to protect any bacteria to developing with the sugar left.
