A wine with serious personality. Very light maceration adds an extra dimension.

Hand-harvested 20 October 2016, from a selection of 10 plots of Riesling. Five-day whole-bunch cold maceration, so they don’t begin fermentation. This is followed by a maceration of two days at a higher temperature and then the fermentation commences. Wild yeasts, fermentation started partly on the skins, fermented in 1,000-litre wooden barrels. Unfiltered. Aged 7 months in large old oak.

Soil: Loess, loam with a lot of shell limestone
