De-stemmed. Vinification and ageing in stainless steel, only punching down. Varietals are vinified separately.

The Muscat of Alexandria has two harvests – the first at 12% ABV, fermented on skins, after which the Semillon skins are added and left for 3 months. Post-fermentation maceration generated flor and some volatile acidity. The second half is harvested at 12.8% ABV and fermented on skins for 3 months (not generating any flor).

Corinto aka Chasselas is harvested in February and stays on skins until September (7 months). The juice is pumped from the top leaving skins behind. The Semillon spends two weeks on skins after fermentation. Bush vines, planted between 1900-1960, 1 ha plot. Unfiltered, unfined.

Acid: 4.39 g/l

Sulphur: 30mg/l max

Soil: Granitic soil. Solidified magma, quartz, red clay, volcanic, not explosive, happened deep inside the volcano.

Yield:  3-4 ton/ha
