Harvested between September 29 and October 3. Slow fermentation with natural yeast in 2-8 year old oak barrels (225L and 500L). The wine was taken out of the barrel before the 2015 harvest and rested in vats for another seven months. Bottled on April 18, 2017

Sulphur: 30 mg/l total (15 mg/l when removed from barrel, 15 mg/l on bottling)

Soil: Billes de Roche blanc comes from a unique plot of the terroir, located at the top of the hill of Cerisaie on its eastern slope. The soil is sandy loamy clay on 30-80cm and rests on a yellow chalk. 30-50 year old vines.
